Yall, this recipe is freakin’ delicious! I tried this for my 3 day cleanse and thought it would probably taste like cardboard at worst and be bland at best. Obviously I had some things to work through with regards to my mindset and this cleanse….anyway…
This was a surprise and a treat. I would TOTALLY do a big batch in the spring/summer months and eat on it for a week or bring it to a potluck or a bbq. It is a WINNER!
1/2 medium cucumber, halved lengthwise, sliced
1/2 cup cherry tomatoes, halved
1 Tbsp. red onion, chopped
1 Tbsp. apple cider or red wine vinegar
1 tsp. balsamic vinegar
1 Tbsp. parsley
1 Tbsp. basil (fresh or dried is fine)
Dash of sea salt
Slice cucumber, cherry tomatoes and onion, and place all in mixing bowl. Add wet and dry seasonings together in a small bowl and whisk together. Pour dressing over cucumber mixture and toss to blend.
